If you’re not in the mood to cook after an especially busy day at the office, you’re in luck! Here are some quick vegan meal ideas that don’t require you to slave it out in the kitchen.
- Vegan Burritos
All you need to make a delicious vegan burrito are some wraps (try whole-wheat ones for some extra goodness) and veggies of your choice. Some good picks include beans, chickpeas, steamed broccoli, spinach, onions and red peppers. Add in some hummus to make it extra delicious. So healthy and so yum!
- Flash Stir-Fry
Don’t think you need a lot to prep a tasty stir-fry. Simply throw in whatever you have. But don’t forget the tempeh! Some ingredient ideas include carrots, peppers, soy-ginger sauce and rice.
- Bulk Up Your Salad
A salad can be a meal in and of itself if you add weighty and nourishing ingredients to it. Try throwing in some mangoes, lentils and spicy eggplant to create a great Indian-inspired dish. You can get the recipe here.
- Tofu Scramble
Tofu is satisfying, so it’s a must for eating a good meal when you’re pressed for time. You can make use of leftover veggies you have from the night before in this recipe. Place the tofu in a non-stick skillet. Split it into cubes and let it cook on medium-heat for a few minutes. Add some extra ingredients, such as garlic and onion powder. Also add in the veggies, such as broccoli and asparagus. Stir the mixture well and break the pieces of tofu into smaller bits so that it will start to look just like scrambled eggs. Finally, throw in some salt or pepper to taste.
