So I'm sure I'm not alone, but I tend to leave my sweets/treats till the end of the day, when I am curled up with a tea and a movie and my cat...this sometimes results in me eating either too much or going for not so great pre-packaged vegan desserts. I've seemed to have solved this, by making mini single serving cakes that are really quick to make and some are even under 100 calories per cake. I find out all of the nutritional info beforehand and then I know I can't over do it since I am only making one mini cake it a time, as opposed to making a regular-sized one.
If you aren't against using microwaves, then they really take no time at all. However, using an oven should only increase the time by about 10 minutes. There are soo many different varieties - Just go experiment and enjoy your little cakes. Not that we should all be eating cakes all the time, even mini ones - But if you want a treat or are craving something chocolately or cakey, at least you know you can do so without it sabotaging your healthy diet. Most of these really aren't so bad, especially if you mind the sugar content. I try to use unsweetened apple sauce and a bit of xylitol in order to keep the sugar low. These are especially good if you feel like you want to grab a chocolate bar, or are going to a potluck or party where there will either be non-vegan foods or tons of really unhealthy ones. Just bring one of these along and maybe some others for your friends and you can still enjoy something sweet. :)
