Delicious fast "chocolatey" pudding made with chia seeds. I usually use all xylitol as the sweetener and don't add in any maple syrup or agave, but use what you prefer! Very filling and a great way to satisfy a chocolate-craving. I'd even eat this for breakfast. :)
Ingredients
- 1 1/4 cup unsweetened almond milk
- 1/4 cup chia seeds
- 3 tbs carob powder
- 1/4 tsp vanilla extract
- 1 tbs maple syrup / agave nectar (or 1-3 3g packets of Xylitol)
- pinch of sea salt
- optional: carob chips / cacao nibs (to sprinkle on top)
Directions
- Add all ingredients in a blender and blend until smooth. If you don’t have a blender or if it isn’t very powerful, you can simply mix all the ingredients together in a bowl and leave in the fridge for a couple of hours or overnight to thicken. The texture will be more like tapioca instead of being completely smooth. I store these in single serving glass ramekins (they come with a plastic lid). Or you can pudding all of it in one container.
