I had picked up some GoBio Chocolate pudding the other day and have been craving it again, but it usually costs around $1.99-$2.99 and the store that carries it is quite out of the way. I looked at the ingredients and there are only a few simple ingredients. It was pretty much corn starch, cocoa and sea salt (They tell you to add milk and sugar). I decided to try to make my own this morning and it thickened up perfectly and is so much cheaper if you have most of the ingredients.
* I listed three different kinds of sweeteners, but feel free to add all xylitol, all vegan sugar, all agave, all maple syrup...etc. I was just experimenting, but used 4 tbs of sweetener in the end.
- 4 tbs corn starch
- 2 cups unsweetened almond milk
- 1 tbs xylitol
- 2 tbs coconut sap / date sugar
- 1 tbs agave nectar
- 1/4 cup + 1 tbs cacao powder
- 1 tsp vanilla extract
- pinch of sea salt
Makes 4 servings - each serving approximately 3/4 cup of pudding. Around 140 calories per serving. (I added 1 tbs of Enjoy Life Mega Chunk chocolate chips, so the calorie count will be slightly lower if you don't add that in)
- Get out a small bowl and add in 1/2 cup of the almond milk and the rest of the ingredients. In a pot, add in the other 1 1/2 cups of the almond milk and start to bring to a boil. Whisk and thoroughly mix the ingredients in the bowl so that there are no more lumps.
- Add the mixture in the bowl to the pot of milk and frequently stir. Once it starts to boil, lower the heat to medium-low and continue to stir for a couple of minutes until the pudding thickens. (It will thicken more when it sets in the fridge).
- Remove from heat and allow to cool before serving. I prefer to let it set for a few hours in the fridge so it is chilled and thicker, but you may enjoy it warm! I distrubuted the pudding into 4 glass ramekins with lids using a 3/4 measuring cup.
