Falahari Alu : Simple and Light!

It's time for another simple recipe. For me, being a vegetarian is always about eating light food that can be digested easily. Ideally we must eat enough to get energy and nutrition. Well, this recipe is light but is tasty enough to keep you plugged once you try it.

Getting to the name first, fal+ahar means fruit based diet. Both potato and tomato, the main ingredients of this dish are considered to be fruits and hence the name. We consume this lot on the days we are fasting. I remember when we used to come back home tired, this was one dish my mother used to quickly make.

Ingredients: 4 medium sized boiled potatoes, 2 medium sized tomatoes, a small bunch of coriander (clintario) leaves, cumin seeds, salt, 1tsp cooking oil, water

Method: Heat cooking oil in a pan and add cumin seeds. Now add chopped tomato pieces and salt to taste. Peel and mash the potatoes and add to the mixture. Stir and wait for 2-3 minutes. Add about 2 cups of water and add finely chopped coriander leaves. Keep on low flame/heat for about 5 minutes. Falahari Alu is ready to serve.

This is a versatile dish that goes with Indian bread, baked bread or rice equally. Try it out!

    Its great for bachelors because of its quick and simple nature. I like it with sweetened yoghurt. Its delicious that way :) oh and if you like it a bit spicy, add a finely cut green chilli to it. That makes it awesome :D
