Ellen's Soft Tacos

I decided to check out Ellen Degeneres' new Vegan Blog that's a part of her television show's website.  While still a work in progress, I found a few good vegan meal ideas.  The recipes were lacking a lot of detail so I prepared one and recorded more accurate measurements and cooking techniques.

I love Ellen and really admire how she brings the vegan lifestyle mainstream. She has the unique ability to highlight famous people, families and products which support this admirable and healthy way of living.

1 package Gardein brand Beefless Tips (available at Whole Foods)

1/2 cup prepared green salsa

2 ripe avocados

2 tablespoons lime juice

1/4 cup fresh cilantro

8 organic corn tortillas

Shredded cabbage (about 2 cups)

Slice the Beefless tips in half and cook in 2 teaspoons canola oil over medium high heat until nicely browned. Remove from heat and mix in 1/4 cup prepared green salsa. Dice the ripe avocado and add lime juice, minced cilantro and rest of prepared green salsa. Season with salt and pepper to taste. Add the beefless tips with the avocado salsa and shredded cabbage to warmed corn tortillas*. 

*You can warm tortillas in a pan with a little canola oil - about 2 minutes per side on medium heat or in a microwave between damp paper towels for 30 seconds.

      I live in San Diego where of course there is a huge Mexican influence and the chance to eat very authentic mexican cuisine. Cabbage is used a lot and is so nice and crunchy in tacos.

    Voted. They sound wonderful, and I have started buying in tortillas a lot nowadays, as they are so versatile, so it won't be hard for me to try these! Sadly we don't have Gardein products across the pond here though; I could just use another beef-substitute, I presume?

      Definitely - or tofu or grilled veggies instead. I live for my corn tortillas since I try to remain gluten free too!
