I love eating at Thai restaurants and then trying to replicate the recipes at home. Fried Rice is my savior on a lot of busy week days. The best part is that you can make it more or less spicy as per what ever works for you.
I usually love most recipes with eggplants. They can turn any recipe into tasting great. I’d been thinking of doing fried rice with eggplant and recently got to making this recipe that I’m sharing.
All you need is:
a) 1 cup of cooked Rice
b) 1 Eggplant
c) 1 Green Pepper
d) Few Fresh Basil leaves
e) 2 Garlic Cloves
f) 1 tablespoon cashews
g) 1 tablespoon soy sauce
h) Black Pepper
Boil and cook the rice. Slice eggplant, green peppers and chop garlic cloves. In a pan, roast the cashews till they are a light brown.
Heat a tablespoon oil and add the garlic cloves and sliced eggplant. Saute for a few minutes, stirring occasionally to check it does not stick. Add green peppers and basil leaves once the eggplant is half cooked. Cook for just another minute and add soy sauce and rice. Stir a little and grind some fresh black pepper on top. Spread roasted cashews on top. And voila!

This sonds delicious! Have you ever tried using coconut aminos in place of soy sauce? It's a wonderful soy-free soy sauce. Definitely worth trying if you haven't yet!
