Everybody misses animal products when they first turn vegan. It sucks not having foods you used to love like steaks and cheeses and especially those decadent desserts! Being vegan for a while, thinking about certain desserts is just gross! However, there is one that I still love, as a kid I'd eat it all the time, and I have never recieved closure from leaving it behind when I turned vegan; I needed some ice cream!
Now, of course there are vegan ice creams made from soy, coconut, almonds, and rice, but they are definitely not cheap. Also, they are far from healthy, but this is ice cream right? I was at a loss for what to do, but over time I developed a healthy, easy-to-make, vegan, ice cream recipe.
You will need:
2 frozen bananas (per serving)
With this single ingredient you can make amazing soft-style icecream in a food processor. The trick is to peel the bananas after theyre frozen, a knife definitely helps here.
Think plain bananas are too simple? Spice it up! I've made variations with cinnamon and nutmeg, cacao powder, adding nut butters, and even sneaking in some brown rice protein powder, and raisins.
