Everyone has a craving now and then for something sweet!
(Well I suffer from a ailment formally known as "sweet tooth" and this pudding is the perfect medication.)
This little pudding rocks when you need a guilt free chocolate hit. It's vegan, gluten free and refined sugar free... It is pretty much a super pudding and it is a simple crowd pleaser, if your making it for friends.
With minimal preparation time and no oven needed, these delicious creations really hit the spot. You can dress them up and make them fancy for a dinner party dessert or keep them for your own sneaky treat when your kicking on the couch after work. Either way they won't last long.
The best thing about these puddings is you can modify the recipe to suit your taste. Not a fan of chocolate? Use a mashed banana instead of cacao, or throw some berries in. Go crazy and mix up a little super pudding if your own, with your own flavours. And let me know how it goes, because I want to try your yummy ideas out too!
- 400 ml Coconut milk
- 1/4 cup chia seeds
- 1/4 cup agave
- 1/4 cup raw cacao
*Add any of your favourite ingredients to put your own twist on your pudding i.e. Cinnamon, vanilla bean or chunks of vegan chocolate!
- Mix all ingredients together in a bowl until well combined and the chia seeds are starting to thicken up the mixture.
- Then pour your pudding mixture into you choice of bowl or cup (I used 2 x old fashioned glasses) Then pop your soon to be inhaled puddings in the fridge for fifteen minutes, or until set to desired consistency.
- Top with your choice of fruit, sauce or nuts... EAT!
(These measurements equal to two servings, double or quadruple the ingredients to compensate for the number of people being served.)
