Easy Orange-Ginger Brunch Biscuits

In need of a luxurious weekend treat?  Expecting fun company?  Consider making a quick batch of orange-ginger brunch biscuits!  

These zesty numbers are essentially low-cal vegan scones!  Treat them accordingly by adding your favorite jam and serving them with a hot pot of tea.

Play some soothing or spritely music while you eat these puppies; preferably on a slow sunday morning, in comfortable clothes, among cherished friends. ;)


Easy Orange-Ginger Brunch Biscuits


2 cups organic Flour

2 tbsp Vegan Sugar

1/4 cup Candied Ginger, diced small

1/2 cup Vegan Butter, cubed and chilled

3/4 cup organic Almond Milk

1 tbsp fresh Orange Juice

1/2 tsp fresh Grated Ginger

1 tsp Orange Zest

2 tsp Baking Powder

1/2 tsp Baking Soda

1/2 tsp Sea Salt


Preheat oven to 400 degrees F.

In a large bowl, blend dry ingredients and diced ginger with a fork, reserving 1 tbsp of sugar for later.  Cut chilled butter pieces into dry ingredients, mixing with fork to form large crumbs.

Make a well in the center of dry ingredients and add the wet ingredients.  Quickly fold together with hands until dough forms.

Flour a cutting board and fold dough over a few times to form some layers.  Roll out dough to a one inch thickness and cut with a cookie or biscuit cutter.  

Place biscuits on baking sheet, brush with a little almond milk or orange juice and then sprinkle the reserved tbsp of sugar over the tops.  Poke each biscuit in the center with your finger so they rise evenly as they bake.  

Bake for 12-15 minutes or until golden brown and cooked through.  

Finished biscuits look like little round scones and are great served with vegan butter, thick cream and/or jam.  They are mildly sweet and a perfect accompaniment to fresh fruit and other brunch items.  Enjoy hot or cool.


These baked treats lend themselves well to a variety of fruit and nut additions and swaps. Here are a few of my favorite alternate versions;

*orange juice/zest with dried cranberries (instead of ginger) 

*diced dried apricot and chopped pecans

*dried blueberries with sliced almonds

*lemon juice/zest and poppyseeds

*dried tart cherries with dark chocolate pieces
