Sometimes we need a little comfort food to mend broken hearts, to alleviate stress, or to warm us on a cold day. Comfort food gives us that warm and cozy feeling inside, but with this recipe we can feel compassionate too, knowing that we chose plant-based ingredients. No factory farmed animals were harmed in the making of this Mac n Cheese!
Ingredients
Your choice of vegan butter 2 TBS
Unbleached organic white flour 2 TBS
Soymilk 1 cup
1/3 to 1/2 cup Daiya Cheddar Cheese
salt and pepper to taste
Macaroni 2 cups
Directions
While your macaroni is boiling, begin making a vegan roux. Warm butter until melted at medium temperature. Slowly whisk flour into butter until combined. Immediately begin to add soymilk a quarter cup at a time. Continue whisking until thickened. Add 1/3 to 1/2 cup daiya cheddar cheese and blend. Let sit on low heat until ready to combine with cooked macaroni. Add salt and pepper to taste.
Top with chives, paprika, etc. The sky's the limit!
