I used to love Doritos, and other tortilla chips, but as far as I can see they are not vegan (all of the flavours contain whey powder it seems, even the Original ones). So I was delighted to learn of a way to make your own – quick, easy and deliciously more-ish! The ones you make yourself also taste better than the bought ones, in any case.
All you need is a packet of flour tortilla pancakes (you can use either the wheat or the corn ones), some oil, some condiments, and a hot oven! They are great served with a variety of dips, or just on their own. This recipe uses fresh parsley for flavouring, but you could also use chilli, garlic, or any other seasoning you like.
(WARNING: They are so ridiculously crunchy and addictive, I wouldn’t advise making too many in one go!)
Ingredients (Makes around 16 chips)
4 flour tortillas (either wheat or corn ones)
2-3 tbsp olive oil
1 tbsp of chopped fresh parsley
Coarse sea salt or rocksalt
Freshly ground black pepper, to taste
1) Preheat the oven to 350 ° F (180 ºC/Gas Mark 4). Line a baking tray with foil or parchment.
2) Cut the tortillas into triangles (cut in half, then quarters) and place on the baking sheet, so that they do not overlap.
3) Brush with the olive oil, sprinkle with the parsley and season with salt and pepper.
4) Bake until golden-brown, about 5 minutes. Let cool and serve with any dip of your choice (or eat warm, straight from the oven!)
