With the warm weather upon is a delicious bowl of Gazpacho soup will cool you down and tantalize your taste buds!
The recipe is simple and most of the ingredients you probably already have in your refrigerator or pantry. Even if you aren't handy in the kitchen you can create this savory dish like a pro. It really is that simple. This dish will not disappoint!
3 regular sized cucumbers peeled and chopped
3 garlic cloves
3 slices of white bread with crust cut off
6 scallions, you will use only the whites
½ cup of water
Lemon juice to taste
¼ cup Sherry vinegar
½ cup green grapes cut in half
¼ cup plus 4 teaspoons of sliced almonds
½ teaspoon of salt
3 tablespoons of olive oil
Begin by setting aside 1 cup of chopped cucumbers for garnish.
Soak the three slices of white bread in water until soft…approximately two minutes.
In the bowl of a food processor add the bread, the rest of the cucumbers, three scallions, lemon juice, vinegar, ¼ cup almonds, three tablespoons olive oil and salt. Process until the cucumbers are completely blended and you can hardly see the almonds. This usually takes one to two minutes. Taste and season with extra salt or vinegar if necessary.
If you do not own a food processor you can put the ingredients in a mixing bowl and use a mixer to blend it all together.
Now simply ladle one cup of this unforgettable soup into a bowl. Add some of the reserved chopped cucumbers, a tablespoon of scallions, a teaspoon of almonds and two tablespoons of grapes in the center of the soup.
It is cool and fabulous! Don’t be afraid to experiment and add something new to the mix. The last time I made this I added two peeled slices of green apple and it added some amazing flavor! Be creative! You’ll find yourself making this again and again!
