Cucumbers: A Taste of Summer

I don't know about you, but cucumbers have always tasted of summer to me. The bright, cool taste just works for summer days. If you haven't had any cucumbers this summer, it's high time you picked a few up . . . you may have some in your garden or you might even have a friend with a few to give away. 

Here are a few tasty ways to use your cucumbers. You're guaranteed to get a serious summer taste fix with these!

Cucumber Sandwich

Remember those sandwiches your grandmother made, with sliced cukes and mayo? These are not those sandwiches. 

  • 2 slices toasted bread
  • 1 avocado, mashed
  • 1 small cucumber, sliced
  • Alfalfa sprouts
  • Paprika
  • Salt and pepper
  • Spread the avocado on a piece of toasted bread and top with sprouts. Add the cucumber and sprinkle with paprika, salt and pepper to taste. 

Chilled Cucumber Soup

Looking for something sophisticated but simple? This soup is a big hit around here! You can also toss it in a travel mug and take it with you to work. This makes enough to feed four people, more if you are just doing appetizers.

  • 5 cucumbers, chopped
  • 2 Tblsp. oil
  • 1 onion, minced
  • 1/4 c. dill, minced
  • 3 c. vegetable broth
  • salt and pepper to taste

In a medium pot, saute the onions and cucumbers for about 5 minutes, or until the onion is translucent.

Add the broth and simmer for 20 minutes. Allow to cool slightly and then blend until smooth (be careful . . . hot food in the blender will blow the top off and make a mess!). Add the dill and season to taste. Chill before serving.

If you want a creamy soup, you can mix in some soy or coconut milk, as well.

Cucumber Noodles with Lemon and Basil

Pasta can be a bit heavy for a summer meal, but cucumber noodles really hit the spot. This light dish is perfect for picnics.

  • 3 cucumbers
  • 1 tsp. lemon zest
  • 1 Tblsp. lemon juice
  • 2 Tblsp. light oil
  • 3 Tblsp. fresh basil, minced
  • salt and pepper

In a bowl, mix the basil and oil. Add the lemon juice and mix well.

Use a mandoline to make long, flat noodles or a grater to create shorter, thinner noodles from your cucumbers. Grate them lengthwise for best results.

Toss the noodles in the oil mixture and season to taste. Chill for 1 hour before serving. Add the lemon zest right before serving.
