Prep Time: 30 minutes
Cook Time: 7 to 8 hours on low
This recipe is nice to make as a side dish or a dessert. The best part is it fits in with a vegan diet for it contains no dairy products. I have used this on holidays and for everyday meals, and it is always enjoyed by both adults and children.
5 or 6 apples, peeled and cored, 2 tablespoons of dark brown sugar, 1 teaspoon cinnamon, 1/2 cup canned, crushed pineapple, drained (save the juice), pineapple juice, 1/4 cup chopped walnuts.
First mix sugar, cinnamon, and pineapple. Stuff apples with the pineapple mixture. Pour the pineapple juice into cooker, making sure you have 1/2 cup of juice. If not add more juice. Add the stuffed apples to cooker and sprinkle with the walnuts.
Cook on low heat 7 to 8 hours. Yield: 5-6 servings.

This seems very interesting! I like the idea of leaving the apples whole. It could make a nice presentation on a dessert plate. Voted!
