Coconut-Lime-Banana Pancake with Homemade Coconut Palm Caramel

Just because you are vegan, it does not mean that you have to sacrifice brunch foods that are usually focused around eggs. There are alternatives! Apple sauce, flax seeds and mashed bananas are all excellent egg replacers and add a hit of extra flavour. For this recipe I replaced eggs with 2 baby bananas, but 1 regular sized banana would also do the job.

Palm sugar is one of the healthiest sugars to consume because it is unbleached, unrefined and is high in potassium, zinc, iron and several B vitamins.

Palm sugar syrup:

Dissolve 2 two-inch balls of coconut palm sugar (1 cup) in half a sauce pan of boiling water. Simmer until most of the water has evaporated and you are left with a syrup. This syrup will taste like caramel-from-heaven.


  • 2 mashed bananas
  • ½ cup shredded coconut
  • Zest of 2 limes
  • 2 cups flour (of your choice, I used wheat)
  • 1 tsp baking powder
  • Pinch of salt
  • 1 cup water
  • 2 tbs vegetable oil

Mix all the pancake ingredients together and set aside for 5-10 minutes to let the baking powder bubble. Scoop out 1 ladle of mixture into a heated, oiled pan and fry each side until golden brown. Serve with sliced bananas and drizzle with palm syrup.

    I will remember this.. palm sugar = caramel from heaven :) Jaggery is also a kind of palm sugar, isn't it?

      Yes! Toddy palm sugar. There is also a kind of palm syrup from India that I want to try called "Neera." It is supposed to be really healthy and is sometimes used in place of maple syrup in "the master cleanse."

        Yes we also have a drink called Neera..sold on road-sides here in Mumbai I have had it only twice till now..came to know about it recently!

    You get my vote for sharing a recipe that's sweet:) Hadn't heard of coconut palm sugar. Thanks for sharing that. I will try and see if its available here in the US. Is it supposed to be a healthier sugar option?

      yes, it is a heathy sugar because it is minimally processed and stripped of its nutrients. If you want a healthier sugar option and you are in N. America, try grade B or grade 2 maple syrup. It is darker than the usual and has a lot of nutrients.

    Hey, I noticed that you have an affinity for anything with coconut or ginger... wink, wink. So do I. I love thai food and veggie sushi, partially because of those two ingredients! I just have to ask: with all the hoopla Greenpeace is making around companies that use palm ingredients, due to the environmental impact it has, have you looked into finding palm-based ingredients that are fair-trade and jungle-friendly?       I LOVE veggie sushi (maki) and I miss it Palm - Yes I am aware and the problem takes place here in Indonesia :( The problem is just from palm oil because the entire tree is harvested. Coconut palm sugar is from the blossom of the tree - the nectar is collected and turned into sugar, which is sustainable and is is not hurting orangutans:
