Broccoli is one vegetable that I think blends easily into any kind of cooking you plan to take to. I use it in stir fries, in pastas and even as appetizers like fritters. This time I thought of cooking it with spices like turmeric and cumin seeds.
It’s a very simple recipe yet very flavorful and with broccoli, you know it has to be quick too. The turmeric adds wonder to the dish.
Ingredients (served 2-3):
• 1 lb Broccoli
• 1 red Onion sliced
• 1 Tomato chopped
• 1 teaspoon Mustard seeds
• 1/2 teaspoon Turmeric
• 1 teaspoon Coriander powder
• 1 teaspoon Cumin powder
• Salt and Pepper to taste
• Oil to cook
Wash and chop the broccoli into bite sizes. Thin slice the onion and chop the tomato and set aside.
Heat one tablespoon oil in a pan and add the mustard seeds. When the seeds begin to sputter, add chopped onions and stir a little until the onions turn soft. Now add the chopped tomato and stir to mix. Add turmeric, coriander powder, cumin powder and stir. Add the Broccoli florets and sprinkle salt and pepper on top.
Broccoli, besides being a easy to cook, is also a very healthy veggie that provides vitamins and minerals, and also helps in the detoxifying process. Stir to mix in all the spices well. Cover and cook for just a few minutes till broccoli is nice and soft. Serve hot with your choice of bread or rice.
