There are very few vegetarian soup choices at most restaurants I visit. Black bean soup is one healthy, delicious and wholesome option. I love the one they serve at Panera Bread. This one is my own version of it. Simple to cook, it makes a great meal served with a sandwich or salad. You can make it with canned beans or fresh ones too. I used fresh beans as I like going the whole way at times, since it not only tastes great but also provides cooking pleasure.
Ingredients ( serves 2) :
• 1 cup fresh Black Beans / 1 can Black Beans
• 1 Onion chopped
• ½ inch Ginger minced
• 2 cloves Garlic minced
• 1 large tomato pureed
• 1 teaspoon cumin seeds
• ½ teaspoon turmeric
• Salt and black pepper to taste
• ½ cup cilantro for garnish
If using canned beans drain them. I soaked the beans for about 2 hours in warm water. Then brought the water to a boil and cooked on low heat for about forty minutes until beans were soft.
Heat one tablespoon oil in a pan and add cumin seeds. Stir in chopped onions, minced ginger and garlic and stir for a bit until onions are soft. Add pureed tomato. Cook for half a minute and add the beans leaving about 1/4 cup beans aside. Now add turmeric, salt and pepper. Puree the remaining beans and add to the soup. Feel free to add oregano or even spicy salsa sauce to add more spice. I like it more basic. Simmer for a few minutes and your soup is ready. Garnish with cilantro and serve warm!
