Banana Ice Cream

This is such a simple recipe with amazing results. For not a lot of ingredients or money, you can make this easy healthy dessert. When I first served this to my friend she was at a loss as to what the ingredients were. No there isn’t milk of any kind in it. But it sure tastes like “ice cream”. Have experimented with blackberries and blueberries when I had a lot from the "you pick". Last week I got some free cherries at the farmers market and incorporated them in the recipe. Delish!!


3 Bananas

2 Peaches or equivalent amount of berries, cherries or your favorite fruit that can be frozen.

½ tsp. Extract either vanilla or almond {Optional}


Peel bananas, slice about ¼ in thick

Cut fruit into small pieces

Lay out all the pieces individually on parchment paper and freeze for a couple of hours.

When ready, puree bananas in a food processor until very smooth. It may look like at first like it’s not going to puree but it will. Then add the rest of the fruit and extract if using.

Continue pureeing until all fruit is blended.

By now the mixture will have softened, so divide into individual servings and refreeze for about an hour. Then it’s ready to enjoy.

Serving size is up to you. For me this recipe makes about 4-5 servings.
