It may not have its origins in Bali, but coconut and other dairy free, fruit shakes are popular in Bali and a great way to beat the tropical heat.
This recipe is for four servings, and it is quite filling – being made from coconut milk.
1 cup (can) coconut milk
1 cup ice water
2 cups ice cubes
Sugar to taste (I used, brown organic palm sugar)
Combine coconut milk, water and sugar in a blender and blend for 10 – 20 seconds so that the sugar dissolves. Add the ice cubes and gently grind them into a slush. Do not over blend because if you do the ice will melt and you will not have slush, but rather a very wet and cold juice.
If you really want to impress your guests, serve the coconut slush inside a young coconut with a straw. Selamat Minum! (enjoy your drink!)
