This is a lovely and filling alternative to your plain old bowl of cereal for breakfast. It's lower in calories, high in fiber and loaded with antioxidants from the fresh berries. This dish can be prepared ahead of time and kept in the refrigerator. Simply slice a piece and re-heat. Add a little extra coconut milk for added creaminess.
¼ cup instant oats
1 cup rolled oats
1 tsp baking powder
½ cup low fat coconut milk
½ cup unsweetened applesauce
4 teaspoons stevia
1 cup blueberries
1 cup sliced strawberries
1/2 cup shredded coconut
(1/2 cup almonds or walnuts - optional)
Instructions
Preheat oven to 350F. Combine dry ingredients together in a mixing bowl. Add liquid ingredients, fruit and coconut - mix well. Transfer to an 11x7 baking pan and bake 30 minutes, until thoroughly warm, a toothpick inserted into the center comes out clean and its a little crusty on top. (The oatmeal will also puff up a bit).

You forgot to vote for yourself!! Oh, and this really sounds great! I adore oatmeal, and this also sounds like a good snack when you make a large batch and put it in the fridge. Yum!
