I love making sandwiches for breakfast. And if I have avocados my husband loves them too. This recipe is great with the avocado flavor and benefits. You can use any bread of your choice. In the image above I’ve used a whole rye bread.
Ingredients ( Serves 1):
• 2 Bread slices toasted
• 1 Avocado peeled and sliced
• 1 Tomato chopped
• 1 Onion chopped
• 2 tablespoons Hummus
• ½ cup Baby Spinach
• 1 teaspoon Oregano
• 1 teaspoon dried Basil
• Black pepper to taste
• Salt to taste
- Take a small skillet and heat one teaspoon oil. Add the chopped onions and stir. Cook for a few minutes till they are soft. Add the dried basil, mix and remove out to a bowl.
- Toast the bread slices and spread hummus on both sides. Then spread the onions and layer the tomatoes. Add the sliced avocado and the baby spinach.
- Sprinkle oregano, salt and pepper to taste. And you have a yummy sandwich ready! Serve with your favorite fruit on the side. Have it for breakfast or even a snack any time of the day.

Thanks Carolyn! I use it a lot on sandwiches...its a healthy substitute for mayo and cheese. Easily available in most grocery stores...we usually get it from whole foods...you can also make it at home...there are a couple of recipes on this site...:)
