Autumn is fast approaching and with that comes millions of delicious apples! Near my current home, there is a trail where the ground is literally covered in a thick carpet of apples. Its smells great and all, and sometimes people pick the undamaged ones, but it's always surprising to see so much of them going to waste. So let’s get blending!
There are many apple recipes out there and apple pie and apple cider seem to be the most popular so how about if we combine them both into a new kind of drink?
Recently at the Canadian National Exhibition the must-try fair food was an apple pie shake. I did not have the opportunity to go this year, (not that I missed anything really) but heard from some people that the shake was literally made by taking a piece of pie and putting it into a blender with milk and ice cream. I understand why people would enjoy the flavours of a spiced apple, but feel strangely about drinking a blended pastry crust.
This smoothie tastes exactly like apple pie filling (minus the crust!) and takes much less time. In fact you can whip this smoothie up in no time!
Before I was vegan, I loved having my pie a-la-mode and letting the cold ball of ice cream melt into the apples. The creaminess is an extra bonus, and contrasts the light acidity of the apples. You are welcome to use your favourite dairy-free ice cream in this recipe, however coconut milk will do just as well, and it adds that dreamy coconut flavour!
Vegan apple pie smoothie
- 1 cup apple sauce
- 1/2 cup coconut milk
- 2 table spoons of date syrup (or any syrup)
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 teaspoon cardamom
- 1/4 teaspoon ground clove
Add all ingredients to a blender and blend until a uniform consistency.
For a thinner smoothie, add more coconut milk, or water.
