Whether married, dating, or single, relax during the weekends with someone, or a group of people, you are most close to, enjoying a French-style holiday. A continental breakfast, a picnic lunch at the park or beach, and a romantic or group dinner will enable you to reconnect all over again with the ones you love.
Start your morning off with a Vegan croissant, some vegan butter and homemade jam, a glass of fresh-squeezed orange juice, and a cup of coffee made in a Coffee Press.
Homemade Jam ingredients include ½ stick of vegan butter, ¼ cup of pureed fruit of your choice, whether strawberries, blueberries, cherries, peach, apricot, raspberries, kiwi, or blackberries, and 1 tablespoon of agave. Mix ingredients well and spread on croissant.
For lunch, pack a wicker picnic basket, filled with baguette sandwiches, fresh salad, and a pastry, and enjoy a picnic at a local park or beach. For refreshments, a dispenser filled fresh-squeezed lemonade, a glass of red wine, or a cup of coffee is enough to quench your thirst. Bring along your favorite CD with classical French music, and relax on a warm blanket, eating and playing backgammon while listening to classical French music in the background.
Baguette sandwich ingredients include Vegan tuna, Vegenaise, ¼ cup of black olives, 3 tablespoons of minced red onion, 2 pressed garlic cloves, 2 tablespoons of minced basil, 2 whole wheat baguettes, 2 cups of baby arugula leaves, 4 thinly sliced tomatoes, and Vegan cheese slices'
After spreading vegenaise on the inside of the baguette, lightly spread some tuna, before adding some tomato slices and one or two cheese slices. Then, mix olives, onion, garlic, basil, and arugula leaves together. Add one or two tablespoons of this veggie mixture into the sandwiches.
Salad ingredients include 1 celery, 2 squeezed lemons, ½ teaspoon of sea salt, 4 carrots, 1 tablespoon of poppy seeds, 2 tablespoons of Dijon mustard, 1 tablespoon of white wine vinegar, 3 tablespoons of chopped cilantro, 2 tablespoons of minced shallot, and 1/3 cup of olive oil.
Grate celery and place into a bowl. Put lemon juice and sea salt on top, and stir well. Then, grate carrots and place into the bowl. Add poppy seed to the mixture, and then mix well. In another bowl, mix mustard, vinegar, cilantro, shallot and olive oil into a small bowl. Mix well. Pour this dressing mixture over the salad mixture, and mix well.
Green beans dish ingredients include 1 tablespoon of olive oil, 1 minced shallot, 1 lb. of green beans, 1 tablespoon of grapeseed oil, 2 tablespoons of turbinado sugar, ¼ teaspoon of sea salt, ¼ teaspoon of black pepper, 1 tablespoon of flavored vinegar of your choice, and ½ cup of chopped walnuts.
Place olive oil in a pan, and turn heat on medium-low. Then, add shallot and sauté for four minutes. Add green beans and cook for two minutes, stirring occasionally. Cover pan and let it cook for another two minutes. Then, place green beans into a bowl. In the same pan, add grapeseed oil, sugar, sea salt, pepper, and vinegar together and mix well. Watch the sugar start to dissolve. Then, add walnuts into the mixture, and cook for four minutes over medium heat. Occasionally stir mixture during this four-minute period. Turn heat off, and place nuts aside to cool. Add cool walnut to the green bean mixture.
Vegan pastry ingredients include one cup of whole wheat flour, ½ cup of almond flour, 1/3 cup of turbinado sugar, a dash of sea salt, ½ cup of vegan shortening, 1 cup of coconut milk, 1 tablespoon of vanilla soymilk, 3 tablespoons of agave, 1 pint of berries of your choice, ¼ cup of water, and ½ cup of slivered almonds.
Preheat oven at 400 degrees Fahrenheit before spraying tart pan with cooking spray. Place wheat flour, almond flour, sugar and sea salt into a bowl, and mix well. Add water until mixture turns into dough. Make six round balls out of this dough before placing each piece on the tart pan area and pressing down into the pan. Bake in the oven for fifteen minutes. It should turn into a golden color after fifteen minutes. As the tarts are baking, mix coconut milk, vanilla soymilk, and agave into a pan, and heat together for ten minutes on medium-low heat. Cook for another five to seven minutes until mixture thickens. Then, pour this mixture into the tart shells and set it aside to cool. Then, place the berries of your choice on top of the tarts. Melt some agave, and brush berries over this melted agave to glaze the berries tart. Sprinkle with slivered almonds on top of each tart.
Fresh-squeezed lemonade ingredients include 2 lemons, 2 liters of filtered water, ½ cup of mint leaves, and some agave. After squeezing two lemons, mix all these ingredients together inside a pitcher, and then pour into a plastic drink dispenser.
Place each food in separate Tupperware, cover, and place in your refrigerator until you are ready to go on your weekend picnic. Organize each Tupperware of sandwiches, salad, green bean dish, and tarts into your picnic basket. Add a bottle of red wine as well as a thermos of hot café.
Then, for the finale, buy some vegan ice cream, place a spoonful inside a bowl, and pour some coffee over the ice cream to enjoy a coffee/ice cream dessert.
