I’m sharing another international vegan recipe with you, and this time it incorporates Mediterranean ingredients. The main ingredient in this dish is actually Extra Virgin Olive Oil straight from Sicily. 10% of Italy's olive oil comes from the island of Sicily. You might think that all olive oil is alike, but once you've tasted aromatic oil that has been freshly pressed; your tongue will immediately recognize the difference! The Mediterranean diet is well known for having healthy ingredients. Extra Virgin Olive Oil is a key player in this diet. When partnered with other healthy ingredients, it can significantly lower a person's risk of developing diabetes and heart disease. It has anti-cancer benefits, and can aid in digestion and weight loss. Here's a recipe that I thought was absolutely delicious. You use olive oil to boil instead of water, and the fresher the ingredients, the better. I hope you enjoy this vegan meal as much as I did.
Mediterranean Pasta Toss
- 5 cups of Olive Oil (add or subtract as needed)
- 2 cups of your favorite green greens, such as kale, spinach, chard, etc.
- 1 medium-sized onion, cut into small wedges
- 2-3 cups of fresh grape tomatoes, cleaned
- One tablespoon of Basil
- One tablespoon of Oregano
- 1/3 cup of Fresh Mint, crushed
- One tablespoon of Fennel
- 8 oz. of pitted black olives
- Pasta of your choice
Instructions: Pour olive oil into a boiler. Boil grape tomatoes and small onion wedges in the olive oil along with Basil, Oregano, Mint, and Fennel. Continue boiling until the tomatoes are tender and create their own sauce. Lower heat to medium. Add roughage and stir until softened. Add black olives and toss mixture with your favorite pasta.
