#1 Avocado-Lime Sauce
Ingredients
½ cup of extra-virgin olive oil
½ medium avocado
1 jalapeño
1 garlic clove
Fresh basil
Cilantro leaves
Salt and black pepper
Preparation
Pit and peel avocado, dice it. Peel and chop the shallot, garlic clove, jalapeño, fresh basil and cilantro leaves. Put olive oil, avocado, jalapeño, garlic, and shallot in a bowl. Halve limes and squeeze them into a bowl with other ingredients. Cover the bowl and let the sauce stay at room temperature for 15 minutes. Put chopped basil and cilantro leaves into the sauce before serving. Also, add some salt and pepper.
#2 Kimchi Relish
Ingredients
¾ cup of chopped Napa cabbage kimchi
2 tablespoons of soy sauce
½ cup of extra-virgin olive oil
1 ½ tablespoons Sriracha
1 lime
Fresh chives
1 ½ tablespoons light agave syrup

Preparation
Chop fresh chives and put them into a bowl. Halve 1 lime and squeeze the halves into a bowl. Add honey, kimchi, soy sauce, olive oil, Sriracha, and salt and pepper. Stir all the ingredients thoroughly. Cover the bowl and put it into the fridge. Keep the sauce at a room temperature for 10-15 minutes before serving.
#3 French Sauce
Ingredients
½ lemon
1/3 cup of wine vinegar
1 cup of extra-virgin oil
4 garlic cloves
2 teaspoons of Dijon mustard
Salt and black pepper
Preparation
Squeeze half the lemon into a bowl. Peel and chop garlic cloves. Add chopped garlic, olive oil, wine vinegar, and Dijon mustard into a bowl with lemon juice. Add salt and pepper. Stir all the ingredients clockwise. Put the sauce into a glass bottle and set it to chill for several hours before serving.
#4 Balsamic Vinaigrette
Ingredients
2/3 cup of extra-virgin olive oil
½ lemon
1/3 cup of balsamic vinegar
1 shallot
1 ½ teaspoons of hot mustard
Salt and black pepper
Preparation
Peel and chop shallot. Put it into a bowl. Add balsamic vinegar. Add olive oil little by little so that it mixes properly with balsamic vinegar. Squeeze the half lemon into the bowl. Add mustard, salt, and black pepper. Keep the sauce at room temperature at least for 3 hours and then put it into the fridge.

Ingredients
2 tablespoons of cumin seeds
1 tablespoon of coriander seeds
2 jalapeños
2 small scallions
1 small garlic clove
½ lemon
½ cup of extra-virgin olive oil
Flat-leaf parsley leaves
Fresh cilantro leaves with tender stems
Preparation
Lightly toast cumin and coriander seeds for 3 minutes. Squeeze the half lemon into a cup. Peel the garlic. Slice scallions and jalapeños. Put seeds with jalapeños, scallions, garlic, oil, parsley, cilantro, lemon juice, and salt into a blender and blend them until smooth. Put the sauce into a ceramic bowl and cover.
