The best recipes are often the simplest ones. That is what I have come to discover as a self-professed lazy chef. Last week I was looking for a great brunch idea to serve to guests on Christmas morning and I was in the mood for something sweet but fast to prepare. In less than 30 minutes I was out of the kitchen with a pile of steaming perfectly golden waffles.
If you have a sweet tooth and savory brunches are not your thing, give this recipe a try.
Here is what you will need:
2 cups of all-purpose flour
2 cups of unsweetened soy milk
4 tablespoons of vegetable oil
2 teaspoons of baking powder
1 teaspoon of pure vanilla extract
1 pinch of salt
Here is what you will need to do:
Step 1: Grease the waffle iron with a drop of vegetable oil and turn it on
Step 2: Mix the flour, baking powder, and salt in a bowl
Step 3: Add the soy milk, vegetable oil and vanilla extract to the dry ingredients
Step 4: Whisk the mixture by hand until it forms into a smooth batter
Step 5: Pour the batter into the waffle iron according to its instructions
These waffles came out perfectly crunchy on the outside and fluffy on the inside. The secret ingredient is the vegetable oil in the batter. Be sure to not omit it or your waffles might not get crispy. I would recommend serving them with pure maple syrup, chocolate sauce, berries and fresh vegan custard cream. Although they are tasty on their own!
You can reheat the leftovers, if there are any that is, in the toaster or the oven for a few minutes at 400 degrees Fahrenheit.
*Note: This recipe makes about 4 waffles. Double the ingredients if you have more company over.

These. Are. So. Tasty. I made them this morning and am chowing down as I type. I used almond milk instead of soy since that's what I had on hand, and added cinnamon to the batter. Topped with strawberries and real maple syrup ???? Thank you for this quick and delicious recipe!
