I find that I am able to keep to a healthier diet/lifestyle if I do a bit of prep work. I'll triple a breakfast / lunch / dinner recipe and leave a couple of servings in the fridge and place the rest in the freezer (obviously not if I'm making salad...ick. :P). I also do this with my fitness. If I want to make it to an early Bikram yoga class, I will back my bag and roll up my yoga mat and place it by the door so I am all ready to go.
If I am stuck without anything premade in the morning, sometimes I am tempted to just grab something on the way to work, which can be difficult when looking for something vegan, and when there isn't a market nearby so I can just grab a piece of fruit. Also, if I have had to go a little too long without food, once I get home I will tend to grab something unhealthy or overeat on snacky things whilst I am making myself a meal. So, if you have something healthy and on hand, you should be able to cut down on munchy some "naughtier" foods. It has helped me out tremendously. :)
I have been digging the portable muffins/bars/bakes lately. Even certain pancakes can be portable. If they are crepe-like, you can roll them in a cloth or paper towel and eat them like a burrito, or if they are more dense and won't roll up, you can just put them in a container.
The following 10 recipes are Gluten-Free (and of course Vegan!) and I believe most, if not all, would work with being frozen if you wanted to make sure you always had a breakfast on hand.
If you do store them in the freezer, place one in the fridge the night before so it has time to defrost, and then you can just quickly heat it in the oven or microwave and then be on your way if you don't hand time to eat it at home.

My faves have been healthy protein carob pancakes with fresh fruit. If I have forgotten to pre-make myself breakfasts, I will sometimes grab an Amazing Grass bar in a pinch...very filling and yummy! Green Smoothies are also a good "grab and go" option, if you have a drink container and a semi-decent blender.
