Vegan Fried Rice

Prep Time: 10 Minutes

Cook Time: 15 Minutes

We often get bored of the mundane dishes that we eat at home, so we end up ordering in a lot. Sometimes eating out a lot isn’t great for your health. This is why I am sharing a recipe of simple vegan fried rice that you can make right at home. All I have to do is toss some veggies along with a tangy sauce and rice and that’s it, my recipe is ready to be devoured. This vegan fried rice can be prepared by using any veggies and I’m as usual using all my favourite vegetables. So let’s take a look at the ingredients and the method to make this dish.

250 grams of tofu

1 cup of vegan brown rice

2 teaspoons of minced garlic

2 teaspoons of minced ginger

½ cup of chopped green onions

½ cup of diced carrots

½ cup of green peas

2 tablespoons of vegan soy sauce

1 tablespoon of peanut butter

1 tablespoon of powdered brown sugar

1 tablespoon of vegan chilli garlic sauce

2 cups of water

Olive oil

Step 1: Pre-heat the oven to 400 degrees and grease the baking tray with some olive oil.

Step 2: Now wrap the tofu in a cloth and press it to remove the excess liquid from the tofu. We don’t want the rice to get soggy.

Step 3: Next, cut the tofu into pieces of around 1-2 inches. Put the tofu on the baking sheet and let it bake for at least 20 minutes. Check if the tofu is baked properly and crispy enough to eat.

Step 4: You can now take the vegan brown rice and boil it in a large vessel with 2 cups of water.

Step 5: While the rice is being cooked we can prepare the wet sauce mix. Take a bowl and add the soy sauce, peanut butter, brown sugar, and chili-garlic sauce and mix well.

Step 6: Now, mix the tofu pieces with the sauce mix and keep it aside for 10 minutes.

Step 7: Next, take a skillet and put some olive oil in the pan. Add the minced garlic, minced ginger, green onions, carrots and green peas and let it cook for 5 minutes.

Step 8: Once the veggies are cooked properly, add the tofu to the skillet and mix well.

Step 9: Now add the boiled rice to the skillet and toss all the ingredients for 5 minutes. Cover the skillet with a lid and let the rice get steamed.

Serve piping hot with any sauce, if you like. Hope you liked the recipe.

Voted. Sounds really delicious! I presume you use the extra-firm type of tofu for this recipe? I have some silken tofu in my cupboard at present but I guess that wouldn't work!
