Vegan Pumpkin Bread

A lot of sweet loaves contain eggs, and that is just a nightmare for vegans. Because pumpkin puree is slimy, there is no need for eggs in the first place, or an egg replacer for that matter.

For two loaves. In either 2, 7”x3” pans, or 8”x4” (whatever you have)

  • 3 cups wheat flour
  • 2 cups packed brown sugar
  • 2 teaspoons baking powder
  • 2 cups pumpkin puree
  • ½ cup raisins
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • ½ teaspoon ground clove
  • ½ teaspoon ground ginger
  • ½ cup soy milk
  • 1 cup vegetable oil

Preheat oven to 350 degrees F, and grease or spray two bread loaf pans. In a mixing bowl, combine flour, sugar, baking powder, salt and spices and stir for a few seconds so that the ingredients are mixed. Add the pumpkin, soy milk, oil, and mix until you have a wet dough.

Pour the mixture into the 2 greased baking pans, and bake for 1 hour, testing with a tooth pick or fork to see if the centre is cooked. Depending on your oven, it may take longer. Remove from the oven, and allow to cool before slicing.
