The recipe that I am going to share today is one of the easiest recipes I’ve ever tried and I mean it! It is a very popular dish that’s famous in South India. The recipe I’m talking about is that of vegan lemon rice, which is a blend of perfectly tossed spices with the added tanginess of lemon. The rich ingredients add a delicious flavour to the recipe. I always make use of leftover rice by preparing this recipe, so you can even use leftover rice to make this recipe. It’s a quick fix when you’re hungry and too lazy to make something that takes time. So let’s get started with this recipe.
- 1 cup of cooked brown rice
- ½ teaspoon of turmeric powder
- ½ teaspoon of mustard seeds
- 2-3 finely chopped green chillies
- 3 tablespoons of lemon juice
- 4-5 cashew nuts
- 1 tablespoon of finely chopped cilantro
- Salt to taste
Step 1: Heat some oil in a pan. Then add the curry leaves and mustard seeds to the pan and let them sauté for a minute.
Step 2: Now that the oil is hot, you can add the cashew nuts and finely chopped green chillies and sauté them for 2 minutes.
Step 3: Add the cooked brown rice, turmeric powder, and salt to taste.
Step 4: Now that you have added the rice, mix all the ingredients well, add some lemon juice and water so that the rice gets cooked properly.
Step 5: Lastly, cover the pan with a lid for 5 minutes and cook it on a low flame until the rice is completely cooked.
Garnish the lemon rice with finely chopped cilantro and serve it piping hot with lentil soup or any vegetable curry. I like keeping it simple and plain but you can add in some veggies as well. Just make sure you toss the veggies in oil before adding them into the rice for the perfect taste.
