Vegan Foods and Drinks for the Alternative Connoisseur

Prep Time: 10-15 minutes

Cook Time: 15 minutes

While going vegan might seem difficult, with so many meals you have to give up, there are so many unique vegan foods to try that you never have to be bored. Most people think that eating vegan leaves you restricted to very few food options and varieties of flavor. Nothing could be further from the truth. The variety of fruits and vegetables are endless, especially if you go beyond the typical boring options found at most grocery stores. Eating vegan is a fun gastronomic exploration of the palette.  Even better are vegan options designed to mimic non-vegan favorites. To jazz up your life, here are a few unique vegan foods and beverages.

Curried Coconut Quinoa, Greens, and Roasted Cauliflower

The roasted cauliflower is made with a head of cauliflower, coconut oil, sea salt, and a quarter tablespoon of cayenne pepper. Combine the ingredients and roast the cauliflower at 425 degrees Fahrenheit.

The quinoa and greens are made with

  • 2 tablespoons of olive oil
  • 1/2 cup of water
  • 1 teaspoon of ground ginger
  • 1 teaspoon of ground turmeric
  • 1 teaspoon of sea salt
  • 1 can of light coconut milk
  • 1 tablespoon of apple cider vinegar
  • 4 cups of chopped spinach
  • 1/2 teaspoon of ground cardamom
  • 1 teaspoon of ground ginger
  • 1 chopped yellow onion

Other optional items you can add include:

  • Raisins
  • Green onions
  • Curry

  1. Cook the quinoa with the onion for five minutes.
  2. Add the rest of the ingredients should be and bring to a boil.
  3. Cook for 15 minutes.
  4. Let cool and then fluff quinoa with a fork.

Homemade Sodas with Flavored Syrup

Many sodas and soda syrups are vegan, but no one seems to really know about it.  Utilizing all the ingredients under the sun will help your favorite flavors shine through the dark clouds of boring, typical food. One way to make your beverages much more interesting is to use flavored syrups, such as syrups that are designed for making Italian cream sodas and other types of drinks. Some companies, like Monin, know that many of these flavored syrups are vegan and can add a lot of needed variety and flavor to different kinds of drinks. However, the best way to enjoy a soda is to make it yourself because some commercial sodas contain gelatin and are therefore not vegan.

Jicama and Pomelo Salad with Thai Dressing

There are an endless number of salads for vegans to enjoy. This version usually uses peanuts, cilantro, sprouts, and cabbage. Of course, make sure to add jicama and pomelo. This dish tastes delicious with a Thai dressing made with:

  • Lime Juice
  • Garlic
  • Soy Sauce
  • Dried Chili
  • Sugar

But the great thing about salads is that they can be mixed and matched easily to always thrill your taste buds and to adapt to whatever is at the supermarket.  Eating vegan is simple and very easy, so don’t be daunted by the unique foods that most vegans eat.  Being creative and constantly changing up your cuisine is what it’s all about.

This is great, Rachelle! It is always great to think outside of the vegan box.
