Thee Most Awesome Vegan Side Dish, Possibly in the Universe!! Red Wine Beans & Peas

O.K...perhaps I'm overstating this just a touch. There are, after all, many delicious vegan side dishes in the universe. This is definitely one of them and it's probably my favorite. Here it is. Prepare to bask in the yumminess.

You will need:

Saucepan

Stirring spoon

Ingredients:

2 handfuls of fresh green beans, strings removed, snapped in half

1 handful of fresh peas, shucked

1 Tbs. olive oil

At least 2 Tbs. of red wine vinegar or more to taste

1 tsp garlic powder

At least ¼ tsp of black pepper or more to taste

1 small can of tomato paste (4 oz.)

Method:

  • Pour olive oil into the saucepan and heat on medium-high setting. When oil is hot, add the beans and peas. Cook for about 3 minutes.
  • Add garlic powder
  • Add black pepper
  • Splash mixture with 1-2 tsp of red wine vinegar
  • Cook for another minute, stirring
  • Add tomato paste and if desired, another splash of red wine vinegar
  • Mix, heat through
  • Eat it all!!

      Thank you! A non-veg friend brought this to a potluck at my house and it was so fabulous that many non-veg people said they would enjoy the dish over rice as a main course. There's something about the red wine vinegar in the tomato paste that compliments the veggies so well that it tastes divine!
