O.K...perhaps I'm overstating this just a touch. There are, after all, many delicious vegan side dishes in the universe. This is definitely one of them and it's probably my favorite. Here it is. Prepare to bask in the yumminess.
You will need:
2 handfuls of fresh green beans, strings removed, snapped in half
1 handful of fresh peas, shucked
1 Tbs. olive oil
At least 2 Tbs. of red wine vinegar or more to taste
1 tsp garlic powder
At least ¼ tsp of black pepper or more to taste
1 small can of tomato paste (4 oz.)
- Pour olive oil into the saucepan and heat on medium-high setting. When oil is hot, add the beans and peas. Cook for about 3 minutes.
- Add garlic powder
- Add black pepper
- Splash mixture with 1-2 tsp of red wine vinegar
- Cook for another minute, stirring
- Add tomato paste and if desired, another splash of red wine vinegar
- Mix, heat through
- Eat it all!!
