A simple salad, side dish or topper; these tangy marinated tomatoes are fast as lightning and sweet as promised:)
Sweet & Tangy Tomato Toppers
2-4 fresh organic Tomatoes (heirlooms and on-the-vine's are great)
Olive Oil, Sugar, Balsamic Vinegar, Red Wine Vinegar, Dried Basil, Dried Tarragon
Salt & Pepper, as desired
Slice tomatoes into rounds and place flat on a plate or in a casserole dish. Drizzle olive oil over the top, and then drizzle the vinegars. Sprinkle tomatoes with sugar and dried basil just to cover them. Tarragon is more pungent and floral than basil, so just a tiny bit will do. Place in fridge and chill overnight.
Easy ideas for your tomato toppers;
*Instant bruschetta! Place tomatoes on top of garlic-rubbed, olive oil toasted baguette slices. You can also do a plate of sweet onions marinated the same way and add those.
*Lovely on top of breakfast egg dishes or tofu scramble.
*Easy Panini! I like them in grilled mock-cheese sammies. They add great flavor to any sandwich, especially a FBLTA: fakin' bacon, lettuce, tomato and avocado:)
*Serve as a simple side salad. Arrange in configuration with cucumber slices and make a pretty design if you wish. I like them over a bed of spicy arugula.
