- 1 large sweet potato, cut into cubes
- 1 package organic extra firm tofu (14 oz), cut into cubes
- 1 yellow onion, sliced
- 4 Ezekiel sprouted tortillas
- 1 tomato, sliced
- 1 avocado, sliced
- 3 cups spinach or other leafy green
- 2 tbsp avocado oil or other cooking oil
- garlic powder
- hot sauce
This recipe is quick, easy and requires minimal preparation and clean up. Once you have created it a couple of times, it will take you even less time to prepare! All of the ingredients for these wraps are very clean. I like Ezekiel brand tortillas because they don't contain weird additives like dough conditioners or binders. Change the flavor with different herbs and spices, or add more sauteed vegetables such as bell peppers.
You will need a medium to large frying pan to start. Prep the sweet potatoes while the oil is warming in the pan on medium-low heat. First, cook the sweet potatoes for about ten minutes, covered, adding desired amount of salt, pepper and garlic powder. While the sweet potatoes are cooking, prep the other vegetables and tofu. Flip the potatoes and then add in the onion, cooking for about 3 minutes. The sweet potatoes and onion should be slightly browned at this point. Next, add the tofu cubes, plus a bit more salt, pepper and garlic powder, and let cook until browned on one side, which typically takes about 5 minutes. Turn the tofu and brown the other side. Prepare your tortilla by warming for a minute or so in the oven if you like. Scoop the tofu, sweet potato and onion into the tortilla and then add spinach, avocado, tomato and hot sauce of your choice. Roll into a burrito, wrap in aluminum foil (to keep it together nicely) and ENJOY! So simple, delicious and healthy!
