Spookily Delicious Vegan Halloween Cookies

Happy Halloween everyone!

Today I am going to show you an amazing recipe to not only give you a great substitute for non vegan halloween treats, but this recipe is also the perfect antidote for avoiding that sugar high (and subsequent crash), from typical candies.

For ingredients you need:

  • 3/4 cup pitless dates
  • 4 tbsp nut flour (i ground a mix of almonds, brazil nuts, and walnuts)
  • 1/2 tsp vanilla extract
  • 1 tsp pumpkin pie spice

Using a food processor, grind the nuts into flour, then add in the other ingredients and blend to perfection.  To make these cookies even more festive, I placed the batter into a Halloween cookie tray, which gave me spooky shapes.  The tray and cookies then need to sit in the refrigerator so they can firm up.  They should take about a half an hour, but the longer they rest, the better!  Also, if you don't have pumpkin pie spice you can add in:

  • 1/2 tsp cinnamon
  • 1/2 tsp ginger
  • 1/4 tsp nutmeg  

The best part? Aside from being vegan and raw, the fats in the nuts, along with the cinnamon, will slow down the absorption of the sugars in the dates, so you get less of a sugar rush.  On the other hand, eating candies with more (processed) sugars, has been known to lead the charge on the dreaded sugar rush.  Over time, this not only leads to weight gain, but may lead to diabetes!
