This recipe features one of the healthiest greens around, Dinosaur Kale. The rippled dark leaves, beautifully streaked with purple, look like something from another time. Dino kale may look ancient but it's full of modern health benefits! It is loaded with fiber, vitamins, minerals and, like all dark leafy greens, it is an excellent source of complete vegan protein!
This soup is wonderful anytime of year as it is both rich and light with just a kick of heat. Double the recipe to share a large pot among family and friends. Feel free to add other vegetables to this soup, in our house we like to play around with what's in the crisper and we like our veg soups good and hearty! :)
Spicy Dinosaur Soup
2 cups organic Dinosaur Kale, chopped
1 cup organic Carrot, diced
1 cup organic Celery, diced
1/2 cup Sweet Onion, diced
2-4 cloves Garlic, minced
5 cups Boiling Water
1/2 cup Israeli CousCous
2 Vegetable Stock Cubes
1-2 tsp crushed Red Pepper Flakes
1/2 tsp fresh Cracked Black Pepper
2 Bay Leaves
1/2 tsp Dried Thyme or Basil
1/2 tsp Lemon Zest
2 tbsp Olive or Grapeseed Oil
1 tbsp Flour
1 pinch of Sugar
*If you like, gently toast the couscous in a saute pan before adding to soup and it will lend a nice nutty flavor.
In a large pot (with lid) cook onions in 1 tbsp oil over medium heat until soft. Add garlic and cook one minute more. Add carrots, celery, bay leaves, thyme/basil and sugar, cook three minutes. Add additional tbsp olive oil and flour, mix to form a roux.
In separate container, add stock cubes and red pepper flakes to five cups boiling water. Dissolve, slowly pour liquid into vegetable pot, a spoonful at a time. Once all stock is added, bring mixture to a boil, continue gentle boil for two minutes.
Simmer until couscous is soft and kale is at desired tenderness. Add fresh cracked pepper and lemon zest, stir and serve.
*To adjust seasoning/salt content, just add water!
