1 Package of Firm Tofu
2 Tablespoons Vegetable Oil or Olive Oil
2 Teaspoons Chopped Garlic
5 Ounces Snake Beans
5 Ounces of Bean Sprouts
4 Tablespoon Soy Sauce
Cut the firm Tofu into cubes (your choice of your favorite brand)
Cut the Snake Beans into 1 3/4 inch length pieces (snake same as green beans)
Heat the oil in a wok over high heat and fry the garlic for a few seconds
Add tofu and stir constantly for 3 minutes
Add snake beans and bean sprouts and fry rapidly until vegetables are cooked
Add soy sauce and mix well
You may serve this over rice or alone. This is an excellent meal and the children love it so much. We grow a lot of long green beans here on the islands and the children love them. Especially cook in a wok. You will not have problems getting your children to eat vegetables this way.
About your Soy Sauce:
Soy sauce has been around for thousands of years. This is an ancient condiment. Soy sauce has been used for thousands of years to give food more flavors. In Britain they call it soya sauce where in Japan it is called shoyu.
Soy sauce is made from fermented soybeans and it is very good for you. When selecting your soy sauce be sure to read the label and stay away from the brands that contain high-sodium blends. When using the soy sauce make sure not to use too much because it is sodium dense.
When soy sauce was first made the process was long and naturally. The soybeans were aged in large barrels in the sun. After several months of fermentation the soybeans were strained to make the natural fermented sauce. Today the process of making soy sauce is not natural and is made by machines in a warehouse. The process takes only a few days to ferment the soybeans.
The best brands of soy sauce add no coloring or extra flavor. They are all natural flavor which comes from the fermentation process. Read the label to make sure there is no caramel coloring added to the brand you choose. If you see caramels coloring on your label stay clear of this brand. Caramel coloring is basically food coloring and have no nutritional benefits and most of these brands are bad for you.
When reading the label and there is hydrolyzed soy protein added to the soy sauce this brand is not worth buying. Hydrolyzed soy protein and caramel coloring are normally found together on the label. This indicates that the soy sauce is not made from natural fungus. Another ingredient is corn syrup and this brand should be avoided completely. Any label that contains corn syrup is one brand never to purchase.
Dark soy sauce made in China has some health benefits. This is a darker brand and has been found to have 10 times the antioxidants of red wine. The darker brand from China also prevents heart disease and allergies. Now knowing this fact it is not good to run out to the market and find the dark Chinese soy sauce and drink large quantities of it. The health benefits are only when used in small doses to supplement your meal.

Light Chinese soy sauce is saltier and normally used to season the food rather than giving your food they soy sauce color.
Premium light soy sauce is a process that first presses the soybean. This process makes a higher quality soy sauce. If the soybeans are first pressed and then double fermented to make the light soy sauce this is a very high quality soy sauce and can be rather expensive.
Dark Chinese soy sauce is thicker and the color is darker. The Chinese add molasses to this brand. The dark soy sauce is used in cooing due to the sweeter and more intense flavor.
