Sexy Red Salad

I love this salad! And so has everyone I have ever served it to. The only problem is there never seems to be enough! I love the sexy red color and the simplicity of it. Mother nature at her best, with just a few ingredients. Tangy, sweet, sexy, and totally vegan! What's not to love!? :)

 Sexy Red Salad 

1 lb fresh organic Strawberries

1 pint fresh organic Raspberries

1 bunch seedless organic Red Grapes

1 Pomegranate, seeded and juiced

1 tsp Apricot Jam

1 tbsp Pomegranate juice.

Rinse fruit and drain.  Take the tops off the strawberries, slice them in half lengthwise and place in large bowl. Slice the grapes in half and add to strawberries.  Seed and juice pomegranate.  Add half to all of the seeds and one tablespoon of juice to the fruit mixture. Add apricot jam, toss to coat.  Add raspberries last, toss to coat again.  Serve at room temperature or slightly chilled, depending on your preference. 

I like to serve it in a beautiful dish to highlight the dazzling color of the fruit.  You can store any leftovers in the fridge for up to two days. *If you fancy it a bit sweeter, feel free to add a splash of agave syrup or a sprinkle of sugar.  If you like it more tart, add a squeeze of fresh lemon juice and enjoy!

This salad is a versatile crowd-pleaser. It's perfect for holiday parties and celebrations of all kinds.  You can double the recipe for larger gatherings or play with tasty additions;

*Try adding blueberries and a side of vegan whipped cream for your Fourth of July picnic. 

*Make it for your sweetie on Valentine's day, served over a scoop of Coconut Bliss vegan ice cream, yum! 

*It's fun and festive!  I love to add a beautiful chiffonade of fresh mint leaves and serve it as a side dish at Christmas!

Any way you toss it, this Sexy Red Salad will surely delight the senses and satisfy the soul! :)

    Please tell me where you can get fresh organic strawberries, raspberries, grapes and poms in the same season without buying fruit from Argentina or Chile? I try to buy things grown as close to home as possible, and here in the midwest, strawberries and raspberries are long gone by the time poms become available.

      you know, i forget how lucky i am to live in california! it is so lovely and temperate we have all of these fruits much of the year. poms are harder of course, they come in the fall, but that is when i created this salad... a friend gave me some poms from her tree and i thought; how can i celebrate the pomegranate and it's splendid color?! :) ha, the result is this salad. the color is the thing for me, so feel free to substitute other fruits available to you locally. best of luck and blessings!
