Secret Recipe Vegan Cake

This is a fun cake to make and a great-tasting cake, even for those non-vegans out there, this is the best cake. I love chocolate but I am not really a cake lover. I love this one though. Try it.

3 cups flour

2 cups sugar

2 tsp baking soda

2 cups water

3/4 cup vegetable oil

2 Tbsp apple cider vinegar

8 Tbsp cocoa

Mix together all the dry ingredients first. Then, add the oil and water. Add the vinegar last and watch what happens. Pretty cool. Beat until very smooth (you can lick the beaters, no raw egg in this recipe!)

If you prefer another flavor cake, omit the cocoa and add another flavor. For example, for a a spice cake, replace cocoa with: 2 tsp cinnamon 1/4 tsp cloves 1/4 tsp nutmeg 1/2 cup molasses

For a rum cake, replace 1 cup water with rum (can still add cocoa for a chocolate rum cake)


Directions: Preheat oven to 350 degrees. Grease and flour two 9" inch pans or one 13 x 9 inch pan. Make sure you grease and flour it very well, this recipe does stick if the pans are not prepped right. Add the mixturea and bake for 45 minutes. It will take the full 45 minutes to bake. Allow to cool slightly, remove from pan, and allow to cool completely. Sprinkle with confectionary sugar, if desired, or frost with vegan chocolate frosting.

Vegan frosting:  Ingredients 1 cup soft vegan butter or margarine,  3½ cups powdered sugar, ½ cup cocoa powder ½ teaspoon  salt, 2 teaspoons vanilla extract,  4 tablespoons soy or almond milk.

Instructions Cream together butter, cocoa and confection sugar. Add vanilla extract, salt, and soymilk and beat for 3 minutes.If too thick, add more soymilk (a half-teaspoon at a time), if too thin, add more sugar.
