Risotto Rice Pudding...Vegan and Easy!

I made a yummy, relatively healthy, vegan rice pudding for those of us that still crave a sweet now and then.  I am trying to limit sugar, but I believe this recipe is healthy as well as delicious!


1 cup organic risotto rice

2 cups unsweetened coconut milk

1 tsp vanilla extract (or to taste)

1 tsp ground cinnamon

organic raisins

agave syrup

Nutiva Coconut Manna

Bring the two cups of unsweetened coconut milk to a boil.  Add the cup of rice, vanilla extract, cinnamon, squirt of agave syrup, and a few spoonfuls of the coconut manna (optional).  Cover, lower temperature and cook until almost all of the liquid is absorbed and add a handful of raisins.  Cook until done.  May be eaten hot or cold.

I ordered the Coconut Manna from the Nutiva company and it is the best tasting raw, organic, unrefined coconut meat I have ever tasted.  I eat it right from the jar!  It tastes sweet also, so you don't need to add much agave syrup if using the manna.

P.S. I borrowed the picture from the Internet.  We ate it before I could take one of my own!
