Raspberry Watermelon Coolie

This smoothie, or "coolie" as I call it because it's more slushy than creamy, is like a healthy version of the Icee!  I have made a million smoothies and there have been many misses, but this one is a hit I find myself going back to time and time again. 

The next time you have some watermelon handy, whip one of these up.  At first it's thick and icy like a slushy.  Then, as it melts, it becomes a silky cool refresher that instantly perks you up and keeps you well hydrated.  It's the perfect beverage to enjoy while Summer's still around. 

Here are a few reasons to Love the main ingredients:

Raspberries:  These succulent little gems are a fabulous source of dietary fiber as well as vitamins K, C, E and B6.  They contain beneficial minerals such as iron, calcium, manganese, phosphorus, magnesium and many more.  Give yourself a treat by scouting out a local organic farmers market to see what true raspberries taste like!  It's a whole different animal compared to what you get at any supermarket.  The tiny, uneven berries have flavor supreme and a sweetness only the gods could muster up!

Watermelon:  This superfood is loved by yogis around the world for it's cleansing properties.  It is said to be of particular benefit to women.  If you wish to cleanse your whole system the yogi way, consider a three or 11 day watermelon-only fast!  After such a fast it is said the body will be purified and better functioning; free flowing!  Watermelon has a high water content, and it's naturally filtered and full of vitamins and minerals.  Buying organic is key so you are cleansing the body and not re-toxing.  This juicy treat also happens to be full of potassium and vitamins A and C.  Super sweet, can't be beat!

Raspberry Watermelon Coolie

  • 1 cup frozen Watermelon Chunks
  • 3/4 cup frozen Raspberries
  • 2 Oranges, juiced and add some of pulp but not white or rind
  • 1 tsp of Agave, to take the edge off the berry tartness (optional)
  • 1 tbsp fresh Mint Leaves, chopped (optional)

Place watermelon chunks and orange juice and pulp into blender, blend until smooth.  Add raspberries, and mint/agave if using.  Blend until mostly smooth but slightly slushy with a few raspberry chunks still visible.  That's how I like it anyway, if you like it super silky, omit mint and blend well.  Pour into a chilled glass and serve with a watermelon triangle if you like.  Enjoy!
