Lately I have been experimenting with different foods a lot. I have had cravings for homemade icings, and thankfully all my attempts have resulted in yummy goodness!
Here is one of my latest homemade icings!
* Half a stick of creamcheese (you can use the vegan option)
* A big handfull of raspberries
* 1 teaspoon of maple syrup or raw honey
Place the cream cheese in a large bowl and mix with electric mixer until smooth. Puree the raspberries in a blender or food processor. Add the raspberries to the cream cheese slowly while mixing. Mix well till all is combined and has a creamy texture. Now add the maple or raw honey and mix again.
You can add more creamcheese if the icing is not thick enough for you, or you can also put it in the refrigerator for about 10 minutes and the icing will thicken.
Depending on how sweet you want it you can add more maple or honey, the sweetness its up to you!
Now this icing is ready to go with your favorite cupcakes or cakes.
Note: This icing is delicious on banana cupcakes!
So that's it, in less then eight minutes you can have an amazing icing that kids are sure to love, and its not full of unhealthy sugars like most icings! Enjoy!
