Mushroom Broccoli Bread Bake

Cook Time: 20-25 minutes

I have loved this recipe for years but the only problem I find now as a vegan is cream of mushroom soup. I have been experimenting on making my own soup and have finally found a way to replace the cream of mushroom soup in my vegan recipes.

Ingredients:

  • 10 ounces fresh broccoli (1 10oz. package frozen broccoli spears)
  • 1 Block silken tofu
  • ½ Cup soymilk
  • 1 Package Vegan dried Mushroom Soup Mix
  • 1 Package fresh mushroom diced and sautéed
  • 10 Green onions diced
  • 1 Teaspoon fresh parsley or parsley flakes
  • ¼ Teaspoon dried tarragon crushed
  • Dash of pepper
  • 1 Package 6 refrigerated flaky dinner rolls
  • ¼ Cup celery finely chopped

 Prepare condensed soup base:

  • Put 1 block silken tofu in blender
  • Add 1 package vegan mushroom soup mix
  • Add ¼ cup soymilk
  • Blend until the tofu makes a creamy condensed soup base
  • Sauté chopped mushroom in 1 tablespoon olive oil spread, drain and add to condensed soup base and mix well

Prepare broccoli bread:

  • Cook broccoli until tender – if using frozen broccoli follow direction on package
  • In mixing bowl combine ½ condensed soup mixture with celery, onions, parsley, tarragon, and pepper
  • Separate dinner rolls
  • Cut into quarters
  • Stir dinner rolls into the soup mixture
  • In 10x6x3 inch baking dish arrange broccoli crosswise
  • Spoon the soup mixture down the center of the broccoli
  • Bake at 350 degrees for 20 to 25 minutes until rolls are golden brown
  • Pour remaining soup base in saucepan
  • Add ¼ cup soymilk
  • Heat soup and pour over baked casserole

Makes 6 servings

This is an excellent dish for dinner parties, potlucks and family get together. I enjoy making this dish for the holidays. To make condensed onion soup; replace the package of vegan mushroom soup mix with vegan onion soup mix. I have even made condensed celery soup by sautéing chopped celery and adding it to my tofu base. The condensed soup base is excellent when adding fresh vegetables.
