Moong Bean Sprout Salad

Prep Time: 5-10 minutes

Well this is one of my guilt free salads. Moong bean sprouts are full of protein and vitamins and energy. You can get them easily at grocers or make them at home. Just wash and soak the beans in water overnight. Next day wash and rinse the beans. Keep covered for another 2 days, rinse each day. The beans will swell to almost double the quantity. This salad really makes an energy packed breakfast or snack.

All you need is:

a) 1 cup moong bean sprouts

b) 1 green bell pepper fine chopped

c) 1 cucumber fine chopped

d) 1/2 cup green onions fine chopped

e) 1 large tomato fine chopped

f) 1 cup parsley fine chopped

g) 1 clove garlic minced

h) 2 tablespoons lemon juice

i) 1 teaspoon Dijon mustard

j) Salt k) Black pepper

Wash and chop all vegetables bell pepper, cucumber, onions, tomato and parsley. Now combine all vegetables with the beans in a bowl. Add lemon juice, garlic, mustard, salt and pepper. Give it a good stir and you’re ready to go.
