Make Your Own Coconut Butter!

Prep Time: 10 minutes

Have you had Coconut Butter before? It is sooo heavenly. I  got a sample pack of some last year and I couldn't get over how creamy and melty it was. I had had Coconut butter in other items, but never on its own. I warmed it up in my hands (while it was still in the sample packet) and then pushed it into some silicone candy/chocolate molds, popped it in the freezer for a few minutes and then I had these awesome melty truffle-type things. So good. After I had tried the sample and loved it, I was about to go online and order myself a full-sized jar, but then I realized it was super simple to make your own!

Coconut Butter is quite pricey. It seems to be around $11-13 for 454g, while you can buy 454g of unsweetened Shredded Coconut for $6.50, so if you make your own, you're saving almost 50% or more! That is quite an awesome amount of savings, especially since making your own should take under 15-20 minutes if you have a somewhat powerful blender and a bit of patience. The more powerful the blender, the easier this will be, but I always made due with my less powerful blender before I finally got a Vitamix.

What you'll need:

  1. Somewhat Powerful Blender / Food Processor
  2. Spatula
  3. Unsweetened Coconut

That's it! (Unless you want to add in lemon, cacao, almonds... I'm sure you could go nuts with variations. Hehe, nuts...almonds. Ok, not so funny.

  1. Pour in the coconut and start to blend it. You will need to occasionally scrape down the sides of the container so everything blends evenly. You will probably need to blend for around 8-12 minutes and keep scraping. When you stop is up to you. If you don't mind little bits of coconut, then you can do it for less time. If you want it completely smooth and creamy, keep blending until you reach the desired consistency.
  2. If it seems drippy/too runny, that is ok! Just transfer into a jar or container and allow to chill in the fridge and it'll firm up.

You may not get it to be as super creamy as a store bought Coconut Butter, but this definitely does the trick in a pinch and not everyone can dish up thirteen bucks for Coconut Butter.
