Macaroni with Chopped Veggies and Chopped Vegan Hot Dogs

I've been a happy, healthy, wise, organic, vegan for 20 years and I'm very grateful for the wise healthy choices I made and continue to make everyday.  A wonderful blessing happened on my healthy journey.  I became a very talented cook food alchemist.  My husband and I have happily enjoyed eating my homemade meals for 20 years and we haven't had any interest in dining out at restaurants.  I feel very grateful for my talent and gift and I'm happy to share it with others.  Please enjoy this wonderful delicious recipe as a complementary gift from my soon-to-be-published cookbook.

 

Ingredients:

1 1/2 C macaroni

1/2 C chopped broccoli

1/2 C chopped zucchini

1 tbsp chopped organic carrot

2 C organic spinach

4 tbsp chopped brown onion

1 tbsp chopped garlic

1/8 C chopped eggplant, peel removed

1/2 C Bragg Liquid Aminos

2 tbsp Organic Flax Oil

1/2 C olive oil

2 tbsp Earth Balance Buttery Spread

1/2 tsp garlic powder

3 whole Lightlife Smart Dogs vegan hot dogs, chopped

 

Instructions:

Bring a full stainless steel pot of water to a rapid boil.  Once water boils, pour in the macaroni and stir evenly.  Reduce heat to medium and allow to cook for 20 minutes.  Stir again several times and allow to cook for another 15 minutes or so or until the macaroni is your desired soft consistency.  Turn of the heat and drain.  Pour into a large bowl and set aside.  Bring another full stainless pot of water to a rapid boil.  Once water boils, reduce heat to medium and pour in the broccoli and carrots and stir evenly.  Allow to cook for 10 minutes, then add the zucchini and spinach.  Allow to cook for 5 minutes and check to make sure the veggies are tender.  Then, turn off the heat and drain.  Set aside and allow to thoroughly drain.  Pour olive oil into cast iron skillet or stainless steel pan, allow to cover evenly, and turn on heat to medium.  Then, add onions, garlic, eggplant, and vegan smart dogs.  Stir evenly and allow to cook for 15 minutes and continue stirring and add more olive oil, as much as needed.   When the veggies and vegan smart dogs are tender and reach your desired taste and consistency, finish stirring and turn off the heat.  Add the macaroni and veggies and all the seasonings and stir thoroughly and evenly.  When the dish is thoroughly and evenly stirred and seasoned, it's ready to serve.   Eat and enjoy!
