Italian Eggplant, Zucchini, Vegan Sausage, and Tomato Bake

Cook Time: 30 Minutes

Year round eggplant is one of my favorite vegetables to eat. When summer comes and zucchini is in the market I love to make this Italian eggplant dish. During winter months when zucchini is not fresh I use frozen zucchini in this recipe. Adding vegan sausage to the dish makes a complete meal. Next time you are hungry for eggplant and zucchini, please, try this delicious recipe.

Ingredients:

  • 3 Large Black Beauty Eggplants
  • 2 Zucchini, cleaned and sliced
  • 1 Pound Vegan sausage
  • 3 Teaspoons salt
  • ¼ Cup flour
  • 2/3 Cup vegetable oil
  • 2 Onions, chopped
  • 1-8 Ounce can whole tomatoes
  • 1 Teaspoon dried basil
  • ½ Teaspoon dried oregano
  • 1 Teaspoon vegan sugar
  • 8 Ounces vegan mozzarella cheese, sliced (vegan options available)
  • ¼ Cup vegan Parmesan cheese (vegan options available)
  • ½ Cup tomato paste
  • 1 Small can diced olives, drained 

Prepare:

  1. Cook vegan sausage according to directions on package, crumble sausage as it cooks. Drain sausage and set aside
  2. Slice eggplant in ½ inch slices and sprinkle with salt
  3. Moisten eggplant slices and roll in flour
  4. Add oil to skillet and heat
  5. Fry eggplant slices in oil, browning on both sides
  6. Remove from skillet, drain on paper towel
  7. Slice zucchini in ½ inch slices, sprinkle with salt
  8. Roll zucchini slices in flour
  9. Add to skillet and brown on both sides
  10. Remove from skillet, drain on paper towel
  11. Add onions, whole tomatoes, dried basil, dried oregano, vegan sugar, pepper, and remaining salt to skillet and cook 10 minutes
  12. Let mixture cool for 5 minutes
  13. In blender, blend mixture or use strainer to push the mixture through
  14. In large, greased baking dish, pour ½ tomato mixture on the bottom
  15. Add a layer of eggplant, zucchini, sausage, and sliced mozzarella cheese
  16. Top with remaining tomato sauce mixture
  17. Sprinkle with diced olives
  18. Sprinkle top with vegan Parmesan cheese
  19. Bake in oven at 400 degrees for 20 minutes

Serving:

Serve with salad and French Bread. This recipes is easy to prepare and take to family get together and pot lucks.
