Irresistible Tofu Wraps

I have recently been trying to take small steps towards veganism, and learning to use tofu in my recipes is one of them. It acts as a replacement of both chicken and paneer (cottage cheese) for me. This is an amazing ingredient I have discovered recently which gives me the opportunity to cook healthy meals creatively.

Here is the recipe:

Ingredients: 200gm Tofu, 2 medium tomatoes, 1 large onion, cooking oil 1 tsp, salt, pepper, red chilli powder(optional), coriander (optional), Indian bread for wrapping

Heat the oil in a pan and add chopped onions. Stir on low heat till they become pink. Add chopped tomatoes. We will not cut the tofu in this recipe but just break it with hands. Add salt, pepper and coriander to the veggies. Mix well and add the hand-mashed tofu to the mix. Cook for another flame for 1-2 minutes. Make sure that the mixture is not too dry. Spread the bread, add the mix to it and wrap.

I like to have these with freshly made organic whole wheat Indian bread (shown in the image above) I think it can also be tried with tortillas, pita bread or edible rice paper.

If the mix is prepared really well, you will be able to feel tomato juice inside the tofu.

If you are not too fond of wraps of find it time consuming to prepare them, you can also have the tofu mix with toast.

    Thanks Akanksha- this sounds yummy, I will have to try it! Even though I have been Vegan for about a year and a half now, I have NEVER really eaten any 'meat replacements' & don't eat a lot of soy products...besides tasting Subways vegetarian sandwich, which tasted like sausage to me.. ICK! I guess the whole point for me after detoxing the taste of meat out of my system was that I hand no more desire for it. I have been debating to cook some tofu and temp meals for my two younger daughters, just to ensure their protein intake, they are picky eaters.. voted and will share! :-)

      Thanks Diana! Even I became a vegetarian by losing my desire for it. Every time I look at it, I automatically remember how it felt in the stomach and back off. But then I have memories of enjoying those foods and they come up when I try these new ones!

    Voted! I love tofu, though I try not to overdo it on soy. It's just so versatile, though. This is a lot like a tofu scramble I make for breakfast. It's almost like scrambled eggs and I add turmeric for color. :)

    Hey, your recipe looks a lot like what they call 'hogao' around here: a tomato, onion and spice mix for fried, smashed plantain (patacon). I already eat a similar recipe with tofu, but never made it into a wrap. Love the idea!
