2 Easy Homemade Vegan Tofu Puddings

I was really impressed last week when I tried making sour cream using tofu.  I couldn’t believe how rich and creamy it came out and how fast and easy it was to make.  I had only used tofu for topping my miso soup or on veggie stir frys, rice noodles or veggie kebabs. 

Tofu is so versatile you can really use it in so many ways.  It’s neutral flavor allows it to absorb whatever you ad to it.  So I decided to try it with something sweet- creamy pudding.

As a kid, I used to love Hunts/Jell-O snack pack puddings.  Chocolate and Lemon Meringue Pie were my favorite flavors.  The lemon meringue was just like eating pie without the crust.  If you’re in the mood for pie though, you can just crush some vegan cookies on top (Nana’s, Liz Lovely, Vienna Fingers, etc.).  That will do it.

If you are craving sweet and sour, the lemon meringue pudding will deliver.   The lemon juice adds a zing, and the stevia adds calorie-free, sugar-free sweetness.  It’s so easy to make; can be prepared in less than 10 minutes and is absolutely delicious, low carb and high protein.

I’ve heard Lemon Meringue Pie takes a long time to make and also heard many stories in which the lemon custard never sets and ends up being soupy.  No need to worry, no baking needed, this recipe is super easy, totally foolproof. 

Lemon Meringue Pudding: Brighten the dark cold winter days with this bright and tangy dessert

Ingredients:

  • 1 14-oz. package silken tofu
  • 5 Stevia packets
  • 4 Tbsps. lemon juice
  • ½ tsp. grated lemon zest
  • 1  tsp.  vanilla extract

Directions:

  1. Blend all ingredients in a food processor.
  2. Refrigerate at least 2 hours to allow it to thicken.
  3. Sprinkle some of the lemon zest on top of each serving.

(Makes about 4 servings)

And for all the chocolate lovers out there, this chocolate tofu pudding is so silky and tasty even kids wouldn’t notice the difference from a snack pack.

Ingredients:

  • 2 tbsp. cocoa powder
  • 1 14-oz. package silken tofu
  • 5 Stevia packets
  • 2 tbsps. Water
  • 2 tbsps. Soy/coconut/almond milk
  • 1 tsp.  Vanilla extract

Directions:

Melt the chocolate with water in a saucepan.

Blend all ingredients in a food processor until mixture is smooth.

Chill for an hour and serve.

Try them both! They get even better after a couple of hours in the fridge. You can serve them as a fancy dessert with a dollop of non-dairy whipped topping, slivered almonds or fruit.
